Plus, we go one extra step that is unique in Salt Lake: all of our cheeses are wrapped with care using a specially designed microscopically permeable wrap that allows the cheese to "breathe" while maintaining its superb flavor and sublime texture.

Our friend Giorgio Cravero carefully selects wheels of Parmigiano-Reggiano just for us, and then carefully ages them to perfection in his cave in Bra, Italy before sending them to us at their peak of flavor and texture so that taste and texture are always extraordinary. For a few dollars more the experience of carefully aged and authentic food is well worth the added investment. Experience the difference!
Before Jenifer Hines and Pete Schrop began making amazing raw cow's milk cheeses in Richmond, Utah in 2005 we shared what we know in hopes of assisting them toward success. Their six Brown Swiss cows now produce fine raw milk that becomes fantastic cheese with the wisdom and experience of Jennifer's years of daily cheesemaking.

Pat Morford's farm is located near the saddle of the mountains between Corvalis and the Oregon coast. Her happy goats produce excellent quality that Pat then shapes into some of the most fascinating and full flavored chevres in the USA.
