Italian Salumi $65

Original Italian recipes made in South San Francisco by our friend Francois Vecchio.

Genoa – named for the birthplace of Christopher Columbus, this Ligurian traditional salumi is soft with hints of red wine, garlic, and black pepper. Soppressata – with variations from Veneto, Abruzzo, and Calabria, Francois’s version gets its spicy kick from a secret variety of red pepperoncino. Coppa, made from a special Umbrian recipe, has a substantial texture and flavor all its own. LaQuercia Prosciutto Rosso – this delicacy is made from the trotters of an heirloom breed of pigs bred in Iowa in the traditional style of authentic Prociutto di Parma.
