Agua Fresca of Strawberries and Fresh Thyme

Agua Frescas are a traditional Mexican fresh fruit beverage meant to be lightly sweet and refreshing. Convert this to an adult beverage by adding 1.5 oz. liquor of your choice per serving. Makes 2 – 4 beverages.

Ingredients:

  • 1 cup organic strawberries
  • 1/4 cup fresh organic thyme sprigs, plus extra for garnish
  • ½ cup sugar

Prep:

Make the simple syrup: In a small saucepan, stir the 1/2 cup sugar with equal parts water and the sprigs of thyme. Bring to a boil, stirring frequently, then remove from the heat. When cooled, strain to remove the thyme sprigs.

Wash and remove the stems from the strawberries.

Instructions:

Puree the strawberries with 1 cup cold water. Strain to remove any seeds or thick pulp. Mix with 2 – 3 cups cold water.

Add in the cooled simple syrup to achieve the desired sweetness.

Serve over ice, garnished with a sprig of fresh thyme.
