Oven-Baked Rutabaga Fries

Tired of the standard greasy fries? Try this oven baked healthier alternative for a fun change. Serves 4 - 6 as a side dish.

Ingredients:

  • 1 large or 2 medium sized organic rutabagas (about 1 ½ - 2 lbs. total)
  • 3 sprigs fresh organic rosemary
  • 3 organic garlic cloves
  • 1 tablespoon LHF California extra virgin olive oil
  • Diamond Kosher salt and freshly ground pepper

Prep:

Bring salted water to boil in a large pot fitted with a steamer.

Peel the rutabaga, then cut into long, ½ inch strips.

Finely mince the rosemary leaves.

Finely mince or grate the garlic cloves.

Instructions:

Preheat oven to 400ºF.

Steam the cut rutabaga strips until tender, about 10 – 12 minutes.

Remove from the heat and allow to cool until comfortable enough to handle.

Dry the rutabaga strips with a towel, then toss with the rosemary, garlic and olive oil.

Using a baking sheet or sheet pan, arrange the fries in a single layer. Bake for 20 – 25 minutes, turning half way through.

Raise the heat to the broiler setting. Broil the fries to crisp and brown them, about 1 – 2 minutes, watching carefully. Salt and pepper to taste, and serve right away.
