Roasting the onions brings out sweet yet complex flavors. Makes an excellent side dish to pork chops or lamb. Depending on their size, serve 1 â€“ 4 onions per person.
- Organic cipollini onions (depending on the size, about 1 â€“ 4 per person)
- Organic fresh thyme sprigs
- LHF California extra virgin olive oil
- Diamond kosher salt and freshly ground pepper
Peel the outer layer from the onions.
Preheat oven to 400ÂºF.
Coat the onions and thyme sprigs thoroughly in the oil. Dust with salt and pepper.
Loosely wrap the onions and thyme in foil. Roast on a baking sheet for 20 minutes. Open the foil package to finish cooking another 20+ minutes, turning once to evenly brown all sides, until lightly golden brown and fork tender. Serve right away.
