Whole Roasted Cipollini Onions

Roasting the onions brings out sweet yet complex flavors.  Makes an excellent side dish to pork chops or lamb. Depending on their size, serve 1 – 4 onions per person.

Ingredients:

  • Organic cipollini onions (depending on the size, about 1 – 4 per person)
  • Organic fresh thyme sprigs
  • LHF California extra virgin olive oil
  • Diamond kosher salt and freshly ground pepper

Prep:

Peel the outer layer from the onions.

Instructions:

Preheat oven to 400ºF.

Coat the onions and thyme sprigs thoroughly in the oil. Dust with salt and pepper.

Loosely wrap the onions and thyme in foil.  Roast on a baking sheet for 20 minutes. Open the foil package to finish cooking another 20+ minutes, turning once to evenly brown all sides, until lightly golden brown and fork tender.  Serve right away.
