Refreshing and herbal, perfect to sip for a late summer afternoon. Makes 4 cocktails.
- 2 organic cucumbers
- 1 container fresh organic raspberries
- 1 organic lime
- 2 pinches fresh organic dill
- ¼ cup Clifford Family Farm local honey
- 3/4 cup Hendricks or other high quality gin
Slice the cucumbers into approximately 1/8 inch slices.
Juice the lime, removing any seeds or pith.
In a sturdy bowl, muddle or mash the cucumber slices (reserve 4 slices for garnish,) raspberries, and fresh dill. Add in the gin, fresh lime and honey. Vigorously shake about half of the mixture in a cocktail shaker, then stain over ice into a cocktail glass. Garnish each glass with a cucumber. Repeat the process for the remaining two cocktails. Serve right away.
