Organic Broccoli Romanesco From COKE FARM, San Juan Bautista, CA

Broccoli Romanesco can be prepared like cauliflower or broccoli. Separate florets and blanche briefly, then toss with hot pasta and cheese. Boil romanesco florets until tender, then puree with garlic, cream and parmesan. Saute florets in a hot skillet, the stir in a mixture of miso, red pepper, anchovy, almonds and water. Blanch romanesco and cauliflower florets, then combine with grated cheese and bechemel, stuff filling in cannelloni shells, top with tomato sauce and bake. To store, place in a plastic bag; refrigerate. Use within two to three days for optimum quality.

Organic Cauliflower From COKE FARM, San Juan Bautista, CA

Cauliflower gets its name from the Latin “caulis” (cabbage) and flower. A member of the nutrition packed Brassica family (cabbage, Brussels sprouts, kale, etc.) cauliflower is rich in fiber, folate, vitamin C, B vitamins and valuable cancer fighting phytochemicals. Most often a pretty creamy white color, it can also be found in shades of orange, purple, and green. Store cauliflower in a bag in the refrigerator for up to 5 days.

Organic Chard From COKE FARM, San Juan Bautista, CA

Considered to be one of the more healthful and nutrient dense vegetables, chard is a vibrant and fun winter green to add to soups, stews and sautés. Any tough stems and ribs should be removed and cooked separately or discarded. Rich in Vitamins A & C, iron and protein, chards grows best in a cooler growing season. Wrap loosely in damp towels and store for two to three days in the refrigerator. While all chard leaves are green, the stems and ribs can vary from pale white to bright orange to fuchsia or deep red. Chard was given the name “Swiss Chard” to distinguish it from several varieties of spinach in early French seed catalogues. When preparing for quick cooking, always remember to remove the tough ribs and stems first.

Laciniato or Dino kale is an heirloom kale variety with very dark blue-green leaves that can be up to a foot long, and an unusual “prehistoric” look.  In peak season in late fall and winter, its flavor is distinctly rich, with an almost sweet quality, with notes of minerals and earthiness. Kale belongs to the same super food family as cabbage, broccoli and Brussels sprouts. Kale is one of the healthiest and most nutritionally dense vegetables.  An excellent source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, it is also rich in Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus. Store Kale only a few days in the refrigerator, lightly wrapped in damp towels.  Kale should always be rinsed and drained before cooking.  When preparing for quick cooking, always remember to remove the tough ribs and stems first.

Organic Watermelon Radishes From COKE FARM, San Juan Bautista, CA

Watermelon Radishes are a hybrid of Chinese Daikon radishes. They grow best in cooler climates, and are in season late fall to late winter. With an appealing pale green skin that reveals a stunning magenta flesh inside, watermelon radishes are a pleasant sweet – sharp combo that is refreshing and unusual. Add to salads for color and crispness or slice and serve raw in your crudités platter. In China, the watermelon radish is known as “shinrimei” which translates to “beauty in the heart.” Remove any greens tops before storing in a bag in the refrigerator for up to two weeks. To rehydrate radishes that have softened, soak in an ice bath for a few hours to make crisp again.

Organic Meyer Lemons From COKE FARM, San Juan Bautista, CA

The hybrid Meyer Lemon is a cross between a standard lemon and a Mandarin Orange. The result is a sweeter and less acidic citrus with a deep brilliant yellow skin. Meyer Lemons juice is especially suited for making lemonade and in cocktails. Or use in salad dressings, marinades, baking, or in any recipe that calls for fresh lemon. Store Meyer Lemons in a bag in the refrigerator for up to two weeks. Meyer lemons are distinct from traditional Eureka or Lisbon Lemons: their signature round shape, vibrant yellow peel, oily and especially fragrant skin, and lower acid, extra sweet flesh.   Use in baking, in vinaigrettes and marinades, or to add a special touch to lemonade and cocktails.  Store Meyer lemons in a bag in the refrigerator for up to two weeks.

Pixie Mandarins are pale orange colored, moderately juicy and always seedless. Individual Pixie Mandarins vary in shape, size and peel texture. In general, Pixies are small (1-3 inches in diameter), have a pebbly skin and are easy to peel with segments that separate easily from one another. Ojai Pixies are grown by a dedicated group of farmers working on small family farms. They make up less than one percent of the California tangerine crop, so enjoy the season while it lasts!

The scalloped edges of this large, very fresh goat tomme and the lovely combination of herbs -- mostly tarragon, savory, and thyme -- pressed into the rind make for a gorgeous appearance and a cheese that embodies spring time, any time of the year. The herbs are edible, and their refreshing green color nicely contrasts with the semi-soft alabaster-white paste. Creamy, smooth, mild and lemony, with notes of white pepper and the clean yet lingering taste of tarragon. Not strong or "barnyardy". Pasteurized, made in Perigord, France.

Named after the two most popular southern Utah canyons, Dark Canyon is made from raw cow's milk by Rockhill Creamery, a farmstead cheese company located in the town of Richmond. Dark Canyon is a semi-hard cheese aged between 2 and 4 months. It has a rich and creamy flavour that is fairly mild. The cheese is delicious on its own, but goes excellent on a burger.
