Organic Artichokes From COKE FARM, San Juan Bautista, CA

Artichokes are thought to have originated in North Africa, where they still grow wild today. They were introduced to the United States in the 19th century by French and Spanish immigrants. Artichokes can be enjoyed in a multitude of ways. To prepare artichokes leaves for a simple boil, use kitchen scissors to trim each scale to remove the thorny tip. Boil in salted water until tender, then remove the leaves one at a time to dip in melted butter, hollandaise or aioli, scraping away only the soft inside of each leaf with your teeth. Remove the inedible fuzzy choke to reveal the delicate heart underneath. Store fresh artichokes unwashed in a plastic bag in the refrigerator for up to a week. When working with artichokes, avoid discoloration after cutting by holding in water with a squeeze of fresh lemon juice.

Organic Fennel Bulb From COKE FARM, San Juan Bautista, CA

Native to the Mediterranean, fennel is highly aromatic with distinct flavors of anise.  Intense while raw but subtle when cooked – the bulb, stalks and fronds are all edible. It is used worldwide to create layers of flavor in cooking. Store fennel in the refrigerator loosely wrapped in a damp towel for several days. Fennel is a good source of Niacin, Calcium, Iron, Magnesium, Phosphorus and Copper, and rich in Dietary Fiber, Vitamin C, Folate, Potassium and Manganese. A relative of dill and parsley, fennel is crunchy with hints of sweetness. The bulb, stalks, fronds, and seeds are all edible and all feature heavily in Mediterranean cooking. With its distinct knobby, hairy and gnarly exterior, celery root's true beauty lies within! Sometimes described as a flavor combination of celery and parsley, celery roots creamy white inside is mildly sweet with complex hints of bitterness. Celery root is delicious boiled, baked or sautéed, or serves as a different and crunchy addition grated raw into salads.  Rich in fiber, minerals and B vitamins, store celery root wrapped in the coldest part of our fridge for up to one month. Chop the greens to enjoy as a garnish with a light celery flavor.

Small round red bulbs sporting tiny roots and bright green stalks, red spring onions definitely deliver the fresh flavor of spring. These tiny tasty onions are simply young onions that are harvested before reaching maturity. Both the tender white onions and their flavorful green stalks are deliciously edible. Cook onions whole or chop and add raw to soups and stews. Super in fresh mixed green salads. Ideal for stir-fries. To store, refrigerate unwashed onions in a plastic bag up to five days for optimum quality and flavor.

Use raw spinach in salads tossed with crispy bacon and bleu cheese, sautéed in olive oil with garlic as a side dish, baked into lasagna, or simply steamed and drizzled with fresh lemon for the ultimate healthy treat. The Valencia orange is a large orange variety with a smooth and pebbled surface and a semi thick fragrant skin that is quite easy to peel. Its flesh, when ripe, is supremely sweet, juicy and tender. Though Valencia oranges' primary usage is for juicing, they are also used for fresh eating as well.   Slightly more acidic than the navel orange, it has only a few seeds.
