Organic Asparagus From COKE FARM, San Juan Bautista, CA

Originally from North Africa and Europe, asparagus is a member of the lily family. With long green stalks and its trademark evergreen tree tips, versatile asparagus can be steamed, oven-roasted, sautéed, and even fried. To cook, trim off any woody or fibrous ends and peel the bottom part of the stalk. Asparagus pair well with other spring flavors, in particular with morel mushrooms, fennel, green garlic and citrus. Store upright in the fridge in a little bit of water, or wet a towel and wrap it around the ends and hold in the fridge or up to 4 days.

Organic Rainbow Chard From COKE FARM, San Juan Bautista, CA

Considered to be one of the more healthful and nutrient dense vegetables, chard is a vibrant and fun winter green to add to soups, stews and sautés. Any tough stems and ribs should be removed and cooked separately or discarded. Rich in Vitamins A & C, iron and protein, chards grows best in a cooler growing season. Wrap loosely in damp towels and store for two to three days in the refrigerator. While all chard leaves are green, the stems and ribs can vary from pale white to bright orange to fuchsia or deep red. Chard was given the name “Swiss Chard” to distinguish it from several varieties of spinach in early French seed catalogues. Considered to be one of the more healthful and nutrient dense vegetables, chard is ideal for steaming or sautéing, or added to soups or pastas. The crisp stems should be removed and cooked separately.  In season in late spring and early winter, chard is rich in Vitamins A, C & K plus fiber, iron and protein. Organic Beet Greens From COKE FARM, San Juan Bautista, CA

Beet greens have a similar semi-bitter flavor to chard. To best store beets, remove and use the beet greens as soon as possible, leaving about 1 inch stems on the beet roots. Keep the greens no more than 1 or 2 days, wrapped loosely in damp paper towels and refrigerated. Roots will keep for more than 1 week in a bag in the fridge.  

Organic Black Radishes From COKE FARM, San Juan Bautista, CA

Radishes were first grown in the Americas in 1629 by the Pilgrims. Historically radishes have been a significant cultivated food crop through most AD European history and as well as grown in ancient Egypt and China. Black radishes have a dull, dark brown or black skin and a smooth crisp interior, and can grow as large as a turnip.   With a vibrant and peppery bite, radishes can add liveliness to any salad or raw dish, or slice and sauté in olive oil as a tasty side dish. Remove any radish greens (cook right away as you would any other bitter green), and then store unwashed radishes in the fridge for up to 5 days.

Organic Italian Parsley From COKE FARM, San Juan Bautista, CA

Available year-round, Italian parsley (also known as flat leaf parsley) is a member of the Apiaceae group of herbs, renowned for their fresh fragrance and wide variety of uses. Originally cultivated in the Mediterranean, parsley is now grown throughout the Northern hemisphere. Rich in flavorful oils, parsley imparts peppery, lively, fresh nuances to soups, raw and cooked sauces, and is a staple of traditional Italian cooking. Store loosely wrapped in the fridge for several days. If parsley becomes limp, snip off the ends and rehydrate in cool water.

Organic Hass Avocados From COKE FARM, San Juan Bautista, CA

The Hass avocado is known for its quintessentially tumbled leathery fairly thick skin that turns near black when fully mature. The flesh closest to the skin is a lush colored pale lime green and as it nears the central pit it develops a rich creamy yellow tone and softer, oil rich texture. Hass avocado's flavor reflects its texture - creamy and smooth with a nutty and sweet finish. To halve and pit a ripe avocado, cut in half lengthwise until reaching the center stone. Twist the two halves in opposite directions to separate. Remove the pit with a spoon. Carefully peel away skin. Avocados may be mashed, cubed or sliced, stuffed or pureed. To store, ripen fruit at room temperature. Refrigerate when ripe. Once ripe, use promptly for optimum flavor and texture.
