Organic Asparagus From COKE FARM, San Juan Bautista, CA

Originally from North Africa and Europe, asparagus is a member of the lily family. With long green stalks and its trademark evergreen tree tips, versatile asparagus can be steamed, oven-roasted, sautéed, and even fried. To cook, trim off any woody or fibrous ends and peel the bottom part of the stalk. Asparagus pair well with other spring flavors, in particular with morel mushrooms, fennel, green garlic and citrus. Store upright in the fridge in a little bit of water, or wet a towel and wrap it around the ends and hold in the fridge or up to 4 days.

Organic Curly Green Kale From COKE FARM, San Juan Bautista, CA

Kale is a boon to lovers of year-round fresh green vegetables! In season during the coldest of months, kale makes a healthy addition soups or stews and as a sautéed side dish. Unlike the current popular vegetable cooking of today, kale is best when well-cooked (not al dente.) Store Kale only a few days in the refrigerator, lightly wrapped in damp towels. Use kale quickly; its bitter flavors develop the longer it is stored. Wash thoroughly before use to remove dirt and grit. When preparing for quick cooking, always remember to remove any tough ribs and stems first.

Organic Fennel with Fronds From COKE FARM, San Juan Bautista, CA

Native to the Mediterranean, fennel is highly aromatic with distinct flavors of anise.  Intense while raw but subtle when cooked – the bulb, stalks and fronds are all edible. It is used worldwide to create layers of flavor in cooking. Store fennel in the refrigerator loosely wrapped in a damp towel for several days. Fennel is a good source of Niacin, Calcium, Iron, Magnesium, Phosphorus and Copper, and rich in Dietary Fiber, Vitamin C, Folate, Potassium and Manganese. A relative of dill and parsley, fennel is crunchy with hints of sweetness. The bulb, stalks, fronds, and seeds are all edible and all feature heavily in Mediterranean cooking. Organic Red Spring Onions From COKE FARM, San Juan Bautista, CA

Red tipped scallions are an old Italian heirloom variety. These scallions come in bunches and have long green thin leaves that range from 12 to 15 inches in length. The lower bulb has a deep red to purple color at the base with small thin root extensions. The Red tipped scallion offers a typical scallion flavor that is somewhat sweeter than the conventional variety. Spring onions are most often utilized raw. Though that is their most common application, the whole onion can be flash blanched and grilled, which brings out more the robust and sweet elements of the onions, and makes them a bolder pairing for grilled and roasted fish and meats. Spring onions pair well with other ingredients that arrive within the same season such as morels, chanterelles, sweet peas, young lettuces, brassicas, radishes and citrus. Spring onions can be added to vinaigrettes, cream based sauces, soups, pastas, pizzas and risottos.
