Organic Artichokes From COKE FARM, San Juan Bautista, CA

Artichokes are thought to have originated in North Africa, where they still grow wild today. They were introduced to the United States in the 19th century by French and Spanish immigrants. Artichokes can be enjoyed in a multitude of ways. To prepare artichokes leaves for a simple boil, use kitchen scissors to trim each scale to remove the thorny tip. Boil in salted water until tender, then remove the leaves one at a time to dip in melted butter, hollandaise or aioli, scraping away only the soft inside of each leaf with your teeth. Remove the inedible fuzzy choke to reveal the delicate heart underneath. Store fresh artichokes unwashed in a plastic bag in the refrigerator for up to a week. When working with artichokes, avoid discoloration after cutting by holding in water with a squeeze of fresh lemon juice.

Organic Celery Root From COKE FARM, San Juan Bautista, CA

With its distinct knobby, hairy and gnarly exterior, celery root's true beauty lies within! Sometimes described as a flavor combination of celery and parsley, celery roots creamy white inside is mildly sweet with complex hints of bitterness. Celery root is delicious boiled, baked or sautéed, or serves as a different and crunchy addition grated raw into salads.  Rich in fiber, minerals and B vitamins, store celery root wrapped in the coldest part of our fridge for up to one month. Chop the greens to enjoy as a garnish with a light celery flavor.

Organic Redbor Kale From COKE FARM, San Juan Bautista, CA

Redbor kale is a curly leaf kale variety that can be both ornamental and deliciously edible. With deep vibrant green and magenta leaves, redbor kale has a mild, sweet flavor and crisp texture. Redbor kale can be used in any recipe that calls for kale. Sauté after removing its tough ribs and stems, or add to soups or stews. Redbor kale is especially well suited to long-simmering. Kale is one of the most nutrient dense foods - an excellent source of Vitamins A, C, K, B6, and Calcium, plus rich in Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus.   Store Kale only a few days in the refrigerator, lightly wrapped in damp towels. Use kale quickly; its bitter flavors develop the longer it is stored.   Wash thoroughly before use to remove dirt and grit.
