Use in any recipe that calls for Yellow Finns, Russets or Yukon Gold potatoes. Store for up to 1 month in a cool, dry location, but avoid freezing and do not refrigerate. Discard any potatoes with a green tint to their skin, or with any growing roots. Contrary to common belief, it is the flesh, not the skin, which contains most of the potato's nutrition. Sometimes also known as the yellow turnip, rutabagas are members of the brassica family of super nutritious cancer fighting vegetables. Kale is a boon to lovers of year-round fresh green vegetables! In season during the coldest of months, kale makes a healthy addition soups or stews and as a sautéed side dish. Unlike the current popular vegetable cooking of today, kale is best when well-cooked (not al dente.) Store Kale only a few days in the refrigerator, lightly wrapped in damp towels. Use kale quickly; its bitter flavors develop the longer it is stored. Wash thoroughly before use to remove dirt and grit. When preparing for quick cooking, always remember to remove any tough ribs and stems first.

Organic Fava Beans From COKE FARM, San Juan Bautista, CA

In season for a few short weeks in the spring, fava beans are flat, bright green beans with a sweet nutty flavor and a buttery texture. They are contained in thick, long inedible pods. Remove both the inedible shell as well as the beans waxy coating before cooking or enjoying raw. To easily remove inner coating, either blanch or steam the beans, then slip off the shell, or freeze on a sheet pan and crack off the coating.  Favas pair especially well with other spring vegetables such as morels, English peas, or asparagus. They are delicious pureed into a soup, enjoyed sautéed with pasta, or raw in spring salads. To best store favas, keep them unshelled in the refrigerator and use within 5 – 7 days.

A staple of modern American kitchens, carrots originated in ancient Persia.   First cultivated primarily for their greens and seeds, carrots at that time were mostly purple. Other colors, such as white, yellow, and red began to develop over the course of the next thousand years as their cultivation spread through Asia. Rich in potassium, plus Vitamins A and C, cook carrots and serve with a little oil or butter to release their full nutritious potential. Keep wrapped in a bag in the refrigerator for up to 1 week.

Grown on most continents and a dietary staple of many global cuisines, cabbage is one of the most heavily planted vegetables in the world. Rich in Vitamins K & C, plus many essential minerals, frequent consumption of cabbage is linked to lower leaves of breast cancer in women. Store cabbage heads in a bag in the refrigerator for up to a week. The longer the cabbage is stored, the stronger the flavors and odors will be when it is cooked. If using only half of the cabbage head, sprinkle the cut side with a few drops of water and store the remaining head in a plastic bag for another day or two.

Store uncut melons for up to one week at room temperature. Once the melon is cut, store in the fridge and use within two days.
