Spring garlic also known as “green garlic” is the immature bulb and stalk of traditional garlic. If left in the ground, it will grow into a full garlic bulb. With a tall and lanky stalk, a petite and soft bulb, the entire plant is edible. Resembling a scallion, spring garlic is available for just a few weeks’ time in the early spring. Use in place of traditional garlic, or to add depth and a hint of sweetness to salsas, soups, or any sauté. Store wrapped in a bag in the refrigerator for up to 4 days.

A mixture of small, young salad greens, herbs and edible flowers. The greens are a mixture of textures and sweet, spicy and bitter flavors. Among the greens commonly found in the mixture are arugula, dandelion, frisée, mizuma, mâche, radicchio, oak leaf, endive and sorrel. Spring mix is also known as mesclun, mesculum, field greens, spring salad mix, spring mix or field greens. When wrapped in plastic and stored in the vegetable drawer of the refrigerator, the greens will stay fresh for a week.

Radishes were first grown in the Americas in 1629 by the Pilgrims. Historically radishes have been a significant cultivated food crop through most AD European history and as well as grown in ancient Egypt and China. With a vibrant and peppery bite, radishes can add liveliness to any salad or raw dish, or slice and sauté in olive oil as a tasty side dish. Remove any radish greens (cook right away as you would any other bitter green), and then store unwashed radishes in the fridge for up to 5 days.

Garlic scapes are the thin, curly stem that shoots our through the bulb of hard neck garlic. Graceful and unusual, scapes have a mild garlic flavor and aroma with hints of fresh cut grass. Delicate scapes can be enjoyed raw thinly sliced into salads or salsas, gently sautéed as a side dish, or added to fresh pasta, with eggs, or as a garnish for grilled steaks. Slice the scapes lengthwise for an especially pretty presentation.  The whole scape (shoot and tip) are edible.  Use in any recipe that calls for spring onions or green garlic. Store in the fridge for up to 5 days.

Organic Cucumbers From COKE FARM, San Juan Bautista, CA

Cucumbers are most often used raw. Wash Cucumbers before using, to ensure there is no wax left on the skin. Peeling the skin is more of a preference, but it can be bitter so it’s best to try it first. Slice cucumbers and add to salads or a crudité plate. Marinate Cucumbers in oil, vinegar and spices. Cucumbers pair well with mint and dill. Shred Cucumber into cheese cloth and squeeze to remove as much moisture as possible; mix with yogurt and dill for tatziki sauce. Slice lengthwise and dice to add to quinoa or bulgur wheat salad. The nutritional value of Cucumbers is best obtained when they are added to fresh smoothies or juices. Cucumbers will keep for a few days in the refrigerator, even unused portions. Use Cucumbers within a few days for best quality.

In peak sweet season from April to June, strawberries are considered a nutrient dense super fruit due to their high levels of Vitamin C, potent antioxidants, and potassium.   While commonly enjoyed raw as a snack, sliced onto cereal, and in a multitude of desserts, strawberries may also add sweetness and acidity to salads and are perfect in smoothies. Store strawberries unwashed in the fridge for up to two to three days.  Strawberries are thought to be so named as, after picking, they were stored in straw lined baskets.
