JAPANESE TURNIPS From COKE FARM, San Juan Bautista, CA

This sweet turnip is delicious raw. It doesn’t even need to be peeled, but can be simply scrubbed, sliced, and enjoyed. , these quick growing, pretty little globe-shaped roots have crisp, pearly-white flesh. Enjoy their mild flavor sliced up for green salads and crunchy snacks or quickly stirfry, sauté or roast them whole in the oven – they cook in minutes. Mikado’s tasty and nutritious tops make fine cooked greens.

Organic Zucchini From COKE FARM, San Juan Bautista, CA

Although most would identify zucchini as a vegetable, it is actually a fruit. Native to the Americas and growing as long as three feet in some instances, zucchini has a delicate flavor with mildly sweet and floral notes. With both potassium, fiber and Vitamin A, use zucchini grated into muffins or breads, sliced raw on salads, or lightly steamed and topped with butter for an easy kid-friendly side. Store zucchini in the fridge for up to 1 week.

Garlic Scapes From SANDHILL FARMS, Eden, UT

Garlic Scapes are distinguished by their lengthy, smooth and solid stems. Garlic Scapes are a versatile ingredient and can be used both as a vegetable and an herb in raw and cooked preparations. They can be grilled, roasted, sautéed, chopped and added to soups or pureed into sauces. When grilling try tying the scape in a knot prior to cooking to make it easier to flip with tongs. Cooking Scapes will mellow their flavor and impart a sweet flavor. They work great as an ingredient for flavor infusion recipes such as compound butter, hummus and fresh pesto. The heads of mature Scapes can be utilized as well; separate the individual bulbs from the bulbils using your fingers and sprinkle on salads, pizza or pasta preparations. Garlic Scapes are ideal for pickling and preserving for future seasons too. Pair with other vegetables that are in season in late spring such as artichokes, spring peas, fava beans, morel mushrooms, early summer squash, new potatoes, radishes and citrus. Their flavor marries well with that of eggs, olive oil, duck fat, bacon, garlic, pine nuts, white beans, lemon juice, arugula, sea salt, robust cheeses and fresh herbs such as basil, oregano and parsley. To store keep garlic Scapes refrigerated in a paper bag or wrapped in paper towel in a sealed container. For best flavor and texture use within two to three weeks

Organic Purple Majesty Potatoes From COKE FARM, San Juan Bautista, CA

Purple potatoes have deep violet, ink-colored skin and flesh. Depending on the specific variety, their coloring can be opaque or marble throughout the flesh. Purple potatoes are inherently dry, starchy, earthy and slightly nutty in flavor. Though one may find that many purple varieties of potatoes yield small tubers, they are generally harvested young. If left to grow to maturity they become large and oblong, making them suitable for baking and mashing. Though, Peruvian in origin, the Purple potato can be utilized in any cuisine that would otherwise use potatoes. Purple potatoes can be roasted, braised, boiled, baked, fried for chips, and even confit'd. They pair well with savory herbs, garlic, pork, poultry, artichokes, both rich and mild cheese, other starchy vegetables such as corn and shelled beans and of course, salad greens.

Butter lettuce has a smooth buttery flavor with small notes of bitterness, and a tender texture.  It pairs best with light and crisp vinaigrettes, as well as sweet fruit, cottage cheese or seafood.  Red Butter Lettuce is rich in calcium, iron, plus vitamins A and C.  Store lettuce in the colder section of your fridge.  Wrap in a plastic bag and use within 3 - 4 days.

Organic Cauliflower From COKE FARM, San Juan Bautista, CA

Cauliflower gets its name from the Latin “caulis” (cabbage) and flower. A member of the nutrition packed Brassica family (cabbage, Brussels sprouts, kale, etc.) cauliflower is rich in fiber, folate, vitamin C, B vitamins and valuable cancer fighting phytochemicals. Most often a pretty creamy white color, it can also be found in shades of orange, purple, and green. Store cauliflower in a bag in the refrigerator for up to 5 days.

Organic Honeydew Melon From SANDHILL FARMS, Eden, UT

Although usually available in the summer time, Honeydew are technically a winter melon variety with a smooth hard shell that hides sweet pale green flesh inside. Unlike some other melons, honeydew will not sweeten after it is picked. Use to make chilled soups, refreshing salads, in smoothies, or simply slice and enjoy. Store uncut melons for up to one week at room temperature. Once the melon is cut, store in the fridge and use within two days. Honeydew melons have been cultivated in Europe and North Africa since the 15th century, where they are more commonly known White Antibes melon.

Ivory tan in color and creamy in texture, Crucolo provides a mild, buttery flavor with a slightly tangy overtone. The paste of this cheese contains numerous small holes throughout and it has the appearance and elastic feel of being similar to Swiss cheese. Crucolo is a good snacking or appetizer cheese to be served with grapes and light crackers.
