Organic Green Siberian Kale From COKE FARM, San Juan Bautista, CA

Kale is a boon to lovers of year-round fresh green vegetables! In season during the coldest of months, kale makes a healthy addition soups or stews and as a sautéed side dish. Unlike the current popular vegetable cooking of today, kale is best when well-cooked (not al dente.) Store Kale only a few days in the refrigerator, lightly wrapped in damp towels. Use kale quickly; its bitter flavors develop the longer it is stored. Wash thoroughly before use to remove dirt and grit. When preparing for quick cooking, always remember to remove any tough ribs and stems first.

 

Organic Red Leaf Lettuce From COKE FARM, San Juan Bautista, CA

Red leaf lettuce is so named for the maroon red tips of the green lettuce leaves. Its slightly frilly leaves have a crisp texture with a light sweet flavor with notes of earthiness. Red leaf is an excellent base for salads, but also lends texture to sandwiches, and works perfectly for lettuce wraps. Virtually free of calories, red leaf lettuce is full of Vitamins A and K, plus good amounts of essential minerals and fiber. Store wrapped in a bag for up to 5 days in the refrigerator.

Organic Purple Kohlrabi From COKE FARM, San Juan Bautista, CA

A literal translation of the German “kohl” (cabbage) and “rabi” (turnip,) these green, white and purple gems are excellent raw, sliced into salads or grated into coleslaws.  Cooked Kohlrabi is especially delicious with creamy or cheesy foods and stands up well to spicy flavors.  A member of the cabbage family, kohlrabi greens are slightly bitter, while their bulbs have a mild, sweet flavor.  Kohlrabi may be in season both in spring and late fall.  Kohlrabi is rich in Vitamin C, B6, Potassium and Dietary Fiber, and a good source of Thamin & Folate.  Snip off the stalks and store with the bulbs loosely wrapped in plastic in the refrigerator.  The greens will last for several days, and the bulbs for a week or more.  Unless very small, peel the bulbs before cooking.

RECIPE: Roasted Kohlrabi and Acorn Squash

Organic Fennel From COKE FARM, San Juan Bautista, CA

Native to the Mediterranean, fennel is highly aromatic with distinct flavors of anise.  Intense while raw but subtle when cooked – the bulb, stalks and fronds are all edible. It is used worldwide to create layers of flavor in cooking. Store fennel in the refrigerator loosely wrapped in a damp towel for several days. Fennel is a good source of Niacin, Calcium, Iron, Magnesium, Phosphorus and Copper, and rich in Dietary Fiber, Vitamin C, Folate, Potassium and Manganese. A relative of dill and parsley, fennel is crunchy with hints of sweetness. The bulb, stalks, fronds, and seeds are all edible and all feature heavily in Mediterranean cooking. Organic Globe Eggplant From COKE FARM, San Juan Bautista, CA

Globe or purple eggplant is characterized by its size, shape and coloring. Fruits have a trademark glossy, black-purple skin, are oval and oblong in shape, often growing up to ten inches long and wider at the blossom end. They have a characteristic green calyx and a green stem or a leaf shooting out from the base of the stem, wrapping around the top of the smooth-skinned fruit. The flesh is cream colored with a spongy-firm texture. Though the size of Purple eggplant varies once harvested, it is more common to see large robust fruits. Purple eggplant's textures vary dramatically depending on how it is cooked, how much oil is used and of course, when it is harvested. Overly mature fruits will contain developed seeds and ultimately maintain that bitterness eggplant is associated with. Eggplant absorbs flavors and soaks up oil like a sponge. Beware as this can change the flavor and texture in an instant as well as increase the fat and sodium content dramatically. Best applications are grilling, pan frying and roasting. When adding eggplant to a preparation rich in oil, butter or soy sauce try roasting eggplants first to prevent them from soaking up too much of the sauce. Complimentary pairings include other summer vegetables such as tomatoes, squashes and peppers. Other pairings include stewed meats, grilled and baked fish, chicken, chickpeas, lentils, herbs such as basil, mint, cilantro and parsley as well as cheeses such as fresh cow's milk and aged sheep's cheese. Choose smaller firm fruits, a sign of youth and freshness. To store, keep Purple eggplants in a cool dry place and use ideally within two to three days of purchase.

Organic Acorn Squash From COKE FARM, San Juan Bautista, CA

Acorn Squash is sometimes also known as “pepper “or “Des Moines” squash.   With a dark green color, large acorn-like shape, distinctive yellow-orange eye and sweet bright golden flesh, acorn squash is an easy vitamin filled addition to your diet. Biologically it is available all year round, it is actually a summer squash, close relative to the zucchini and yellow squash. Store acorn squash in a cool dark place for up to a month.

For a quick, crowd-pleasing side, slice in the squash in half, scoop out the seeds, butter the cut side, and bake skin side up in a 350 oven until tender (30 – 45 minutes.)   The seeds also make a tasty snack after a quick toasting and a dusting of salt.

Organic Yellow Onions From COKE FARM, San Juan Bautista, CA

Onions are divided into two categories: sweet onions and cooking onions. Sweet onions are best suited for fresh eating as they have higher moisture content equaling a shorter shelf life and a tendency to mold. Cooking onions have a longer shelf life. These are the storage onion varieties that can be stored at room temperature in a dry dark location. Yellow onions are the most common cooking onion utilized in cuisines throughout the world. Fresh eating should be avoided as the Yellow onion's pungency will linger long in raw form and dominate any companion ingredient. Yellow onions are the ubiquitous soup and stock onion. They can also be dry-roasted, sautéed, grilled, caramelized and braised.
