Valencia oranges are the world's most important commercial orange variety. With thin and easy to peel rind, Valencias have few seeds and are perfect for juicing. Rich in fiber and of course, Vitamin C, one Valencia orange has only about 70 calories.
Valencia oranges sometime undergo a process called "regreening." When fruit is left on the tree over the summer months, warmer temperatures cause chlorophyll to color the skin a greenish tent. This change has no affect on the taste of the fruit.

Organic Baby White Turnips, PRIMAVERA, Vista, Ca
Since before Roman times, turnips have been an important source of nutrition. As a member of the mustard family, turnips are vitamin packed – rich in Vitamins A and B6, Calcium and Potassium. They can be a smart alternative to potatoes, adding the complexity of sweet peppery notes to any dish.
Steam or sauté any attached turnip greens right away. The cooked bitter greens can be enjoyed as a tasty side dish or added to soups.
Store the turnip root in a cool dry place, in an open bag, about 3 to 4 days. Baby turnips usually need only a quick wash to remove any excess dirt. If needed, peel the skin and outermost 1/8 inch of larger turnips to remove any bitterness.
Organic Baby Leeks, SHINGAI, San Juan Bautista, CA
Baby leeks resemble spring onions or scallions and are available for just a few weeks in mid-spring. As they are just younger, smaller leeks, they have not yet developed the thick green leaves and are sweeter than "adult" leeks. Crisp when raw, baby leeks become soft and unctuous when cooked. All parts are edible – the bulb, stalk, even the roots.
Use in place of spring onions, scallions, or leeks. Blanch first before cooking, to preserve color and prevent burning. Store for up to one week in the fridge.

Originally grown in ancient Persia, all carrots were purple. Other colors, such as white, yellow, and red began to develop over the course of the next thousand years as their cultivation spread through Asia. The first orange carrots were grown in the Netherlands about 200 years ago for the Royal House of Oranje.
Rich in potassium, plus Vitamins A and C, cook carrots and serve with a little oil or butter to release their full nutritious potential. Keep wrapped in a bag in the refrigerator for up to 1 week.
