Idaho's own Zürsun Heirloom Lentils

Beans get all of the love – protein packed and full of fiber.  But their tiny cousin, the lentil – packs its own one-two punch of iron, protein, fiber, and too-many-to-list essential nutrients, but without that pesky overnight soak.  All that goodness, and lentils are on the dinner table in less than 30 minutes.

Our favorite lentils come direct from Idaho.  Zürsun heirloom beans and lentils are grown on small farms in the Snake River Canyon region of Idaho, with the ideal growing conditions for beans and lentils.  Their authentic heirloom products are from ancient seeds untouched by genetic science or modern technology.  Their beans and lentils are rich and flavorful, delicate and nuanced, and of course, delicious.

Zürsun is owned and run by Jim Soran, a second-generation "bean guy" with 60 years of family roots in the Idaho bean industry. Jim is committed to discover, produce and distribute the world's finest heirloom lentils.  Zürsun's original owner discovered several Idaho farmers growing unknown heirloom lentil varieties, and was instrumental in developing and cultivating new heirloom varieties, such as the Black Beluga and the Petite Crimson.

Beans and lentils are not only good for you – they are good for the planet.  Both require less water and fertilizer than many grain crops, and as a source of protein, beans and lentils have a minimal environmental impact as compared to any animal protein source.

Some of our favorite lentils in stock right now:

Red Chief Lentils - Red Chief are lentils that have had their seed coats removed. The legumes hold their shape, if not overcooked, and are excellent in soups and purees.

French Green Lentils - Robust, earthy flavor and beautiful deep fall-green color make French green lentils - also known as lentilles du Puy - one of the world's finest legumes.

Black Beluga Lentils - Delicate in taste and size, Black Beluga lentils are named for their caviar-like appearance. Originally from the Middle East, Beluga lentils are now farmed in the western U.S.

Ivory Lentils - Ivory lentils are black lentils that have had their dark skin removed. Popular in India, white lentils have a mild, flavor and sturdy texture that blend well with savory vegetables and herbs.

Large Green Lentils - Enjoyed in North and South American cuisines, large green lentils are hearty, meaty and versatile.

Chicken Scratch Lentils - Chicken Scratch is a colorful rainbow heirloom mix of Zürsun lentils, ideal for soups and salads.

Desert Sage Lentils - Desert Sage is an earthy-colored heirloom lentil blend, perfect for sides and soups.
