Gai Lan
Gai lan, often called Chinese broccoli, is a leafy green with thick stems, dark leaves, and small florets that resemble a more robust, earthier version of standard broccoli. Its flavor is mildly bitter with a gentle sweetness, and the stems become tender and juicy when cooked. Gai lan is naturally rich in vitamins A, C, and K, along with calcium and antioxidants. It’s especially suited for high-heat methods like stir-frying and sautĂ©ing, where it stays crisp and flavorful! It’s just as delicious simply steamed and finished with a drizzle of soy sauce or sesame oil. In soups, noodles, and rice dishes, it brings a freshness that balances richer ingredients without overpowering them.
Veigadarte Ash Rind Goat Log
Veigadarte is a small Spanish creamery run by cheesemaker Joaquin Villanueva Casado in the village of Ambasmestas, Castilla-León. The cheese is produced from the milk of his own goat herd and is made in small batches for artisan and export markets. Their ash-rind goat log is a traditionally crafted cheese that begins with pasteurized goat’s milk, cultured and renneted, then formed into logs and coated with vegetable ash before being aged under a white bloomy mold rind. As it ripens, the outer layer under the rind becomes creamy and slightly beige, while the interior stays pale, tender, and mildly tangy. The cheese offers an earthy, slightly yeasty aroma with subtle notes of fresh lemon, peppery greens, and a soft goat-milk tang. The ash rind also contributes a gentle mineral and rustic quality that adds complexity.
King Stone Dairy Ashcombe
King Stone Dairy is an artisan cheesemaker based at Manor Farm in Chedworth, Gloucestershire, committed to small-batch farmhouse production using organic, single-herd cows’ milk. Their Ashcombe cheese is a semi-hard, hand-crafted wheel distinguished by a bold line of wood ash running through its centre. The wheel is washed regularly in a special brine, which helps form a rich, terracotta-colored rind and brings savory, earthy notes that deepen with age. Inside, the paste offers a slightly springy texture with buttery and subtle hints of hazelnut and fresh hay under the rind. The ash vein gives the cheese a distinctive appearance and a faint mineral undertone that complements the creamy richness.Â
American Vinegar Works Quince & Chardonnay Wine Vinegar
American Vinegar Works is a small-batch vinegar maker based in New England that revives old-world fermentation and barrel-aging techniques. Their approach centers on using American wines, ciders, and brews as a base and letting flavors develop slowly and naturally. All of their creations are bottled raw, unfiltered, and by hand. Their Quince & Chardonnay Wine Vinegar blends the crisp acidity of California Chardonnay with the sweet-earthy character of quince for a vinegar that’s bright and lightly sweet. After a patient fermentation and months-long aging in American oak barrels, quince is folded in to give the vinegar a subtle caramel hue and an extra layer of depth. The result is a versatile vinegar that enlivens vinaigrettes, finishes roasted vegetables, lifts soups, or adds brightness to marinades. Amano Raspberry Rose 55%
Amano Artisan Chocolate is a family-run company based out of Orem, Utah. Their Raspberry Rose Dark Chocolate is a beautifully balanced bar that combines rich dark chocolate made with Ecuadorian beans with the bright tartness of raspberries and a gentle hint of rose. The fruit is vibrant but not overpowering, and the small bits of sugar crystals throughout bring an exciting crunch. Like all of Amano’s bars, it’s crafted in small batches using ethically sourced cocoa and meticulous technique.
