Green Beans

Sparkenhoe Red Leicester

Sparkenhoe Red Leicester is a raw-milk, cloth-bound cheese revived in 2005 by the Clarke family in Leicestershire, preserving a style that had been lost for decades. The cheese’s paste is vibrant orange and offers a rich, nutty flavor with subtle sweetness and a soft, chewy texture when young. Over time in Neal’s Yard Dairy’s care, the wheel matures into a drier, more crystalline form with brothy, savoury depth and concentrated umami.

Neal’s Yard Dairy is a London cheese merchant founded in 1979, acclaimed for its expertise in maturing and selecting exceptional British farmhouse cheeses. They source wheels and further age them in their Bermondsey maturation arches, bringing out deeper character and texture.

Coolea

Coolea is a distinctive Irish gouda-style cheese crafted by the Willems family in County Cork, Ireland, utilizing a Dutch approach to cheesemaking, adapted to local ingredients and conditions. Made with pasteurized cow’s milk from Holstein-Friesian herds grazing the Derrynasaggart Mountains, Coolea begins life as a smooth, buttery young cheese and evolves into a richer, denser cheese over time. As it matures beyond twelve months, it develops deep caramel and toffee notes, occasional salt-crystal crunch, and a texture reminiscent of aged Parmesan (though it remains recognizably its own cheese). Coolea is ideal for both snacking on by itself and serving alongside fruit, nutty wines, or hearty bread.

Suehiro Ponzu Sauce

Suehiro is a historic soy-sauce brewer based in Tatsuno City, Hyōgo Prefecture, Japan, with origins dating back to 1879 and a reputation for preserving traditional fermentation methods. Their Ponzu Sauce melds a dark soy-sauce base with the essence of four Japanese citrus fruits: yuzu for aroma, sudachi for acidity, daidai for sweetness & yukou for mildness.  This bright, nuanced blend is deepened with mirin and dashi, creating a condiment that balances salty umami, tangy citrus, and subtle sweetness. Try it as a dip for sashimi or dumplings, a finishing sauce for grilled seafood, or a dressing when whisked with sesame oil!
