Celery Root

Celery root, also known as celeriac, is a the root of the celery plant. Celery root looks like a roundish bulb approximately the size of a grapefruit. It tastes mild and has been described as a slightly sweeter celery flavor than the celery stalks we’re used to eating. It’s a versatile root vegetable used for stews, soups, salads and as a substitute for potatoes in a healthy mash. Celery root fits right in with the craze of keto/low carb diets as it has less carbs than potatoes, sweet potatoes or turnips, roughly 7 grams of net carbs per cup.

Raclette de Savoie

Raclette de Savoie is a semi-firm, raw cow’s milk originating from France. This particular Raclette comes from Central Coast Creamery in Paso Robles, California. They age it 4-6 months to develop the perfect nutty, full flavor. This cheese is often eaten as a main dish, melted and scraped over boiled potatoes, cornichons and pickled onions. It can also be used in fondues, quiches, omelets, and other recipes.

Afterglow

Hailing from Blakesville Creamery in Port Washington, Wisconsin, Afterglow owes its bright, fruity notes to another Wisconsin favorite, New Glarus Belgian Red Ale. Each small goat cheese wheel is washed in this cherry-flavored beer, imbuing it with the stone fruit’s sweetly tart flavor. You’ll also detect a goaty tang, clean minerality, and lactic notes. The perfect addition to any board.
