Red Chard
All chard is Swiss chard; it’s just stalk colors and names that vary! The stalks and leaf veins of Swiss chard vary in color from yellow to pink and deep red to white. They all taste similar so you can use these different varieties of chard interchangeably in most recipes. Chard is technically a member of the beet family (which is also why beet greens are delicious when cooked). In many ways, chard is a bonus green that has two vegetables in one: the leaves can be cooked much like kale or spinach, and the stalk can be cooked, too, which adds a different texture to the dish much like celery. Not quite as intense as kale, chard can be on the bitter side when eaten raw, but it becomes a pleasant, tender green when cooked. Because of its mild, slightly bitter taste, it pairs well with an acid (like lemon) and a bit of salt (like pecorino or parmesan) to balance it out.
Moliterno al Tartufo
Moliterno al Tartufo is a truffle cheese unlike any other. After the sheep’s milk cheese develops a rich, buttery taste during its initial aging, a paste of black truffles is injected directly into the wheel yielding a ribbon of decadent flavor. This luxurious cheese will make the perfect addition to any charcuterie board or can be enjoyed on it’s own with your favorite red wine.
Serra da Estrella
Serra da Estrela (Queijo Serra da Estrela) DOP is the king of Portuguese cheese and has been made for centuries by shepherds in the mountains of Serra da Estrela. It is a sheep’s milk cheese prepared using Bordalaira ewe’s milk. The raw milk is coagulated with thistle rennet. While making this hand-made cheese, curds are broken up by hand. Serra da Estrela is soft, spreadable cheese with a rich, intense flavour. It is available in two types, one is buttery and rich, and another is more mature, firm, and pungent.
Ritrovo Pistachio Cream
Ritrovo Selections is a premium importer of foods that represent Italy’s traditions and quality. Ritrovo means to rediscover in Italian. It’s made with just two ingredients: cane sugar and organic Sicilian pistachios from the foothills of Mount Etna, where the best pistachios in the world are grown. This pure, sweet spread is used in Italy for pastries, cake fillings, and gelati. But you’ll probably find yourself spreading it on toast or just eating it straight from the jar.
