Fennel
Fennel is a member of the carrot family, though it’s not a root vegetable. The base of its long stalks weave together to form a thick, crisp bulb that grows above ground. Every part of it is edible, from the bulb to the flowers, and it can be eaten raw or cooked. Fennel is one of the most underrated vegetables, and if you’re not already cooking with it, you absolutely should be. It has a fresh, aromatic anise flavor, and it can be eaten raw, sautéed, roasted, or added to soups and sauces.
Holey Cow
Holey Cow is made with whole cow’s milk and is aged for at least one month by Central Coast Creamery in Paso Robles, California. This young swiss-style goat’s cheese is dotted with round openings called “eyes”. You will be greeted with the pleasant aroma of fresh cream and strawberries. Its velvety paste boasts notes of melted butter and roasted peanuts and finishes with a little tangy nip.
Julianna
Aged 4 – 8 months, this petite cheese is buttery and smooth like Capriole’s Old Kentucky Tomme, but nuttier and firmer like a Tomme de Savoie. In the latest incarnation, Julianna’s mushroomy rind is punctuated by Herbes de Provence, calendula petals, and safflower petals. She boasts a beguilingly feminine appearance and an aromatic finish on the palate, reminiscent of the flavors of Spring. Its herb coating makes it a perfect pairing for olives, and the buttery but tart quality begs to be paired with a rich, full flavored charcuterie. Like Brin d’Amour, it matches up well with a rosé, making it a perfect summer cheese as well as an outstanding example of the boundless creativity of American cheese making.
Sour Cherry Pomegranate Conserve
A quintessentially Persian preserve with Oregon sour cherries and a spice blend incorporating notes of cocoa, orange flower and pepper. Orange flowers are perfumed with intense notes of honey and clove so pairing them with chocolate makes perfect sense to us! The pit of St. Lucia cherries or “mahlab” is finely ground to intensify the natural almond flavors of the cherry. Best when paired with dairy, game, or nuts.
