Red Spring Onions
Onions are believed to have originated in central Asia and have been cultivated for over 5,000 years. They are less perishable than other crops, easy to transport, and grow in a wide variety of climates. Red Spring Onions are simply the young bulb of the red onion you know and love. They have a savory and sweet flavor with less bite than a mature onion due to less sulphuric content. This versatile allium can be eaten quite young and utilized whole to garnish salads and stir fries, or allowed to mature a bit further and treated like a shallot. They can be eaten raw or cooked. Make sure to wash then trim off the root and any ragged bits at the top before using. Keep in a perforated plastic bag in the fridge, and use within a week to ensure best flavor.
Pecorino Romano Fulvi
Pecorino Romano Fulvi is an ancient sheep’s milk cheese made in the countryside of Rome. Writings that date back to the 1st Century BCE mention this cheese as part of the Roman Legions daily rations, and considered pivotal for a soldier’s wellbeing. It is one of the last remaining pecorinos produced around Rome, most these days are from Sardinia. What sets this pecorino apart is the higher butterfat content, giving a creamier, less dry and salty flavor than others. Aged 10-12 months, it is bold and assertive with a dense cake-like texture. Pecorino Romano Fulvi is perfect as a table cheese or grated over pasta and salads.
Black Bomber by Snowdonia
Black Bomber produced in Wales has been honored with awards from around the globe, securing its spot as Snowdonia Cheese Company’s flagship cheddar. Produced in a petit truckle wax-wrapped format it balances the rich and tangy nature of cheddar with a luxurious finish that lingers on the palate. Pairs best with Cabernet Sauvignon, Malbec, or Riojas. On the food side it compliments chutneys, roasted nuts, and whole grain biscuits.Â

With a sweet, smoky flavor it can be used in soups, pilafs, and salads or ground in to a vibrant purple flour that can substitute 50% of flour in pancake, waffle, and muffins recipes. It cooks on the stove top in just forty minutes or can be done directly in your rice cooker.
Ritual Oat Milk White Chocolate with Chili Beak Oil and Crystallized Ginger
Desert Sands is produced by beloved Utah chocolate company Ritual, inspired by the high mountain deserts down south. Oat milk is utilized to produce white chocolate which has been paired with spicy roasted chili oil – a blend of Arbol, Guajillo, and Chipotle peppers –Â
from another local company Chili Beak. The addition of crystallized ginger pieces creates a unique, scintillating bar of chocolate that’s great for straight up snacking.
