Frisee
Frisée is a member of the chicory family, a group of bitter, leafy vegetables that includes radicchio, escarole, and the Belgian endive. Heads of frisée, also known as curly endive, are thick and bushy with lacy, frazzled stems. Frisee is most often eaten raw, in salads or even as a garnish for dishes. It’s most well known for its use in the famous French bistro salad, salade Lyonnaise, topped with lardons and a poached egg.

Mahon Riserva
An aged version of the most famous cheese from the Balearic Islands. Mahon Reserva is a square-shaped cheese with a characteristic burnt orange rind and deep yellow firm paste. Cheesemakers take cow’s milk cheese and rub it in olive oil as it ages for 1 year, creating a not too dry, smooth cheese with some piquancy in the finish. While full-flavored, the taste is balanced and accessible. Excellent for grating and shaving over pasta or salads.
Tea Rose
Lovingly named after the goat on the Capriole label, Tea Rose is a breath of Spring. Tea Rose stood out as a sweet girl and wonderful milker who produced many beautiful, milking daughters. Not only has she graced the label for decades, but her lineage is woven through the milk that Capriole uses to this day. With its fresh, bright curd, its dusting of fennel pollen, and its shower of herbs and aromatic flower petals, Tea Rose the cheese honors the optimism and renewal of Spring. As the name implies, this chevre invites some floral and herbaceous pairings—from light, floral white wines to flowery teas and tisanes.
