Kojinut Squash

Koginut squash is a relatively new hybrid variety, combining the best qualities of two popular squash types: the nutty flavor of kabocha and the smooth texture of butternut. Small and round with a dusty green skin, this winter squash has a rich orange flesh that’s both creamy and naturally sweet, making it a versatile choice for cooking. When roasted, Koginut squash caramelizes beautifully, creating a buttery, melt-in-your-mouth texture with a subtly sweet, earthy flavor. It requires minimal seasoning to shine—olive oil, salt, and pepper are often all it needs. Due to its sweetness and creaminess, Koginut is perfect for making soups, purees, and risottos, and can even replace sweet potatoes or pumpkins in pies and other desserts. Bauma Garrotxa

Bauma Garrotxa is a traditional goat cheese from the Garrotxa region of Catalonia, Spain. Made with pasteurized goat’s milk, it has a natural, velvety rind and a semi-firm, dense texture. Bauma Garrotxa is aged for about two months, which gives it a mild, earthy flavor with hints of nuttiness and an undertone of herbs and minerals, reflective of the region’s mountainous terrain and the rich diet of the local goats. The cheese has a smooth, ivory interior with a creamy, somewhat crumbly texture. Its flavor is balanced and approachable, offering a gentle tang that is milder than many other goat cheeses. Bauma Garrotxa pairs beautifully with light to medium-bodied wines like a crisp Sauvignon Blanc or a fruity Garnacha. Snowdonina Red Storm

Snowdonia Red Storm is a Red Leicester cheese from the Snowdonia Cheese Company in North Wales. Aged for over 18 months, this cheese has developed a rich, bold flavor and a firm, crumbly texture that melts in the mouth. Red Storm stands out among other Red Leicester cheeses for its deep, savory notes and tangy finish, reflecting Snowdonia’s careful aging process and commitment to quality.
