Casa Lusa is a Portuguese producer dedicated to preserving traditional cheesemaking practices, working closely with regional dairies to utilize the character of local milk. They focus on small-scale production and expressive, Portugal-centric cheeses. Zimbro is a creamy sheep’s milk cheese with a delicate, natural rind. The gentle flavor is milky and slightly tangy with herbal, piney notes from the sheep. It’s rich but still remains light, keeping you coming back for more!
Les Moulins Mahjoub Tunisian Tabil Spice Blend
Tabil is a classic Berber/Amazigh spice blend used in both home and commercial kitchens all around Tunisia. Thought to be an “extension” of harissa, tabil represents the soul of mothers and their flavorful cooking; every mother might have a unique spice blend. Les Moulins Mahjoub’s tabil is a bouquet of spices composed of three-quarters coriander, with the remaining quarter made up of caraway, Baklouti pepper, garlic, and salt. These spices are blended together after 14 days of drying. The resulting flavor is warm and earthy with a bright top note. The process of drying and preserving to concentrate the flavor has been practiced and perfected by the Berbers/Amazigh for centuries. Tabil is wonderful as a flavor enhancer in most dishes, try it in couscous, stews, marinades, spreads, or sprinkled on flatbread.
