Acorn Squash

Acorn squash is a variety of the same squash species as zucchini and other summer squashes, Cucurbita pepo, but with its hard-to-cut skin and drier flesh, it’s treated as a winter squash culinarily. Indigenous peoples prized acorn squash because they could store it for long periods of time and cook it whole in the coals of a fire. In modern American kitchens, acorn squash may be baked, broiled, roasted, steamed, stuffed, sautéed, pureed, or even used in a pie. Perfect to roast whole and puree, turn into soup, or as a buttery side dish.

Manchego Anejo by Pasamontes

Since 1896, the Pasamontes family has been manufacturing Manchego cheeses, which have been made following artisanal tradition, from milking to packaging and labeling. Their most popular being MT Tam, an organic American original, this cheese has all the lusciousness you expect from a triple cream, with a unique core that upholds its texture.
