Ossau-Iraty is a traditional sheep’s milk cheese from the French Pyrenees, protected under AOC and PDO regulations. The milk comes from local Manech and Basco-Béarnaise sheep, whose seasonal grazing in mountain pastures deeply shapes the cheese’s character. This cheese has a firm yet supple texture and an amber, mold-speckled rind.
