Bok Choy

Considered to be one of the oldest cultivated vegetables in the world, Bok Choy is native to China and classified as a type of non-heading cabbage. An excellent source of vitamins A, C, B6, K, and E, it also contains magnesium, potassium, iron, manganese, and calcium. In other words, it’s a multivitamin in a vegetable. Bok Choy has a myriad of cooking applications including braising, boiling, grilling, and sauteing. Leaves and stems can both be eaten. It pairs well and carries the taste of aromatics such as garlic and ginger. If you’re feeling creative it can also be pickled or utilized in homemade kimchi. 

Red Casanova

Red Casanova is a German pasteurized cow’s milk washed-rind cheese that will convert even the most funk averse. Crafted in the foothills of the alps by a union of Bavarian farms, it has notes of onion, beef, sweet cream, and bread dough, savory and buttery without being overpowering. Melt Red Casanova over roasted vegetables or pair with wild boar salami for a special addition to your dinner table.

Lake Breeze by Blakesville Creamery

Lake Breeze is produced by Blakesville Creamery whose goal is to humanely raise healthy goats with sustainable farming practices to create high quality handmade cheese. They are a farmstead creamery meaning the cheese is made on the same land the goats are raised and their milk is collected. This allows them to pay close attention to the purity, quality, and flavor of the milk. Lake Breeze is a soft ripened goat cheese with bright, citrusy, slightly saline flavors and a dense, velvety texture. It pairs well with crisp white wines, hard ciders, naturals roses and reds. Olives, old world salamis, jamon, and crunchy crudites are ideal alongside.

Matiz Quince Paste

Matiz Quince Paste is a traditional Spanish fruit preserve. The original recipe is of ancient origin, with early iterations appearing in Roman recipes as early as the 4th century AD. It is closely linked to the origin of marmalades as well. The best cheeses to pair with quince paste are Manchego, aged Comte. Parmigiano Reggiano, and sharp cheddars. Brie and Camembert are also a good accompaniment. Don’t relegate it only to charcuterie boards, it can also be used in pastries, spread on sandwiches, or simply rolled in sugar to eat like candy.

Orinoco 70% Dark Chocolate with Maple Sugar

Orinoco Chocolate Co. is an Arizona based company that supports ethical and sustainably farmed cacao to produce their meticulously crafted chocolate bars. Through owners Christian and Jessica’s Cacao Consulting they have friendships with farmers and suppliers to bring these incredible products to the consumer. The company name pays homage to the Orinoco River which has served as a means of trade and communication for indigenous inhabitants of the land since time immemorial. 

This bar comes from Patanemo, Venezuela on the coast where cacao grows on mountainous slopes, known to be the best in the world. Patanemo derives from “paz tenemos” or “we have peace.” It is sweetened with mineral-rich, late season maple sugar. The pattern on the packaging is inspired by indigenous Wayuu art.
