Ingredient Features

Delicata Squash

Delicata squash is a beautiful squash that might be mistaken for a decorative gourd – but don’t be fooled! It is absolutely edible and absolutely delicious. The thin, smooth skin has a creamy yellow base with green or orange, vertical stripes. The flesh is firm, thick, fine-grained, and yellow to orange with a central, hollow cavity containing stringy pulp and many flat, hard, cream-colored seeds. Delicata squash, when cooked, is sweet, rich, and moist, much like a sweet potato and the skin does not need to be peeled and is completely edible as well. Delicata squash holds its shape well through cooking, making it an excellent choice for stuffing with grains, meats, or cheese, and baking and serving as a side dish. If you haven’t already, you will fall in love with this squash!

Whitney

Whitney begins with raw milk from Jasper Hill Farm’s own grass-fed cows. The herd’s milk is transformed within the newly renovated farmhouse creamery, which features reclaimed copper vats from the Jura Mountains. Once curds have been formed and cooked, they are transferred to draining molds under vacuum ‘bells’, resulting in a beautifully smooth, tight-knit texture. Whitney has a velvety-smooth, pliant texture with signature notes of toasted nuts, cured ham, and sweet cream. It pairs beautifully on a cheese board with cured meats, dried figs, and pickled shallots, served with a natural white wine. Modeled after classic melting cheeses, Whitney is an ideal cheese to use with a raclette machine; melt it atop a plate of roasted potatoes, garnished with cornichons and charcuterie.

 

O’Banon

O’Banon is basically a solo cheese. While its subtle flavors and beautiful presentation are a perfect foil for bigger heavier cheeses on a cheese board, it’s perfect alone with a simple bread and a glass of dry bubbly. Unfold the leaves like petals around the cheese, allow to dry briefly and come to room temperature, and serve. It can also be grilled briefly on low heat and served with a peach or nectarine salsa.

Peeled Black Garlic

We are super excited to have just received a shipment of this umami-fill Black Garlic! Black garlic is aged fresh garlic with a smooth, soft texture and a rich, sweet taste that can be used to enhance the flavor of many savory (and some sweet!) Over the course of weeks, the garlic loses its raw harshness and develops caramelized notes, a molasses-y sweetness and a deep umami flavor reminiscent of truffles. These whole cloves are tender enough to smear on meat, potatoes or bread, but it can also be chopped or sliced into dishes. Use it in any recipe in place of raw garlic for sweet-savory, pungent yet rounded garlic flavor.
