Frisee
Frisée is a member of the chicory family, a group of bitter, leafy vegetables that includes radicchio, escarole, and the Belgian endive. Heads of frisée, also known as curly endive, are thick and bushy with lacy, frazzled stems. Frisee is most often eaten raw, in salads or even as a garnish for dishes. It’s most well known for its use in the famous French bistro salad, salade Lyonnaise, topped with lardons and a poached egg.
Old Groendal Kristal Gouda
OG Kristal, known to locals in West Belgium as Brokkeloude Roeselare, is a 22 month aged gouda has it all: rich creamy texture with a fudgy, perfectly balanced butterscotch sweetness, and large, well-formed tyrosine crystals that pop like candy in bite after bite. Tyrosine crystals are the crunchy, salty, savory bits of amino acid that form in aged cheeses as the protein structure of the milk breaks down. Kristal leans sweeter, with notes of boozy cherries and butterscotch. The crystallized texture provides a savory balance to the fruity, nutty sweetness.
O’Banon
O’Banon initially has a bright, tart-fruit flavor, but it’s balanced by an underlying sweetness that mellows the cheese and leaves a lasting impression. The paste is dense, but softly cloudlike, and typical of the unique, hand ladled process that makes all Capriole’s lactic cheeses so unique. O’Banon is wrapped in chestnut leaves and soaked in bourbon. While its subtle flavors and beautiful presentation are a perfect foil for bigger heavier cheeses on a cheese board, it’s perfect alone with a simple bread and a glass of dry bubbly. Unfold the leaves like petals around the cheese, allow to dry briefly and come to room temperature, and serve. It can also be grilled briefly on low heat and served with a peach or nectarine salsa.
Peanut Butter Chocolate Halva
Hebel & Co. Halva is made with single origin Ethiopian white humera sesame seeds, considered to be the finest in the world. This type of seed has a unique flavor and oil profile, with a very balanced nuttiness and natural sweetness.
This particular halva is creamy and crispy with the perfect balance of nutty peanut butter and rich chocolate.
