Heirloom Tomatoes

Heirloom tomatoes are a culinary gem with a fascinating history that stretches back generations. Unlike their hybrid counterparts, heirloom tomatoes are open-pollinated and have been carefully cultivated and preserved by farmers for their unique characteristics. These varieties have been passed down through families and communities, making them a true testament to agricultural heritage.

The allure of heirloom tomatoes lies in their remarkable diversity. They come in a dazzling array of colors, shapes, and sizes, from deep purples and vibrant yellows to striking stripes and unique ridges. Each variety boasts its own distinct flavor profile, ranging from sweet and juicy to rich and tangy, offering a taste experience that is unparalleled by modern hybrid tomatoes. Heirloom tomatoes are selected for taste rather than uniformity and shelf-life, which preserves tomatoes genetic diversity and cultural history.

 

Royaal Gouda

Indulging in a cheese that blends mellow flavors and creamy textures, Royaal Gouda by Beemster stands out. Crafted with care, this cow’s milk cheese offers farm-fresh creaminess with sweet almond notes. Aged for four months, it balances freshness and maturity, providing a mild yet complex flavor profile.

Royaal Gouda’s smooth, dense, and semi-firm texture makes it versatile. It excels in egg dishes, enhances sandwiches (especially grilled cheese), and adds depth to gratins. Pair it with fresh fruits like grapes, apples, and strawberries, or dried fruits like cherries, apricots, figs, and ginger. Savory pairings like ham or salami also complement its flavors beautifully.

For drink pairings, light-bodied reds such as Beaujolais and Pinot Noir, delicate whites like Pinot Gris, dry Riesling, and Chablis, or crisp beers like Pilsner and blonde ales are excellent choices.

Old Kentucky Tomme

Old Kentucky Tomme is one of Capriole’s signature cheeses. It was developed as an American interpretation of traditional French Tomme-style cheeses, which are typically semi-hard and made from cow’s milk. Capriole’s version uses goat’s milk, showcasing the unique qualities and flavors that come from this type of milk.

Old Kentucky Tomme is known for its complex and nuanced flavor profile. The cheese has a natural rind and the interior paste is smooth and firm, with a pale ivory color typical of goat’s milk cheeses. The flavor is mild yet earthy, with notes of grass and hay reflecting the terroir of the region where the goats graze. There are also hints of nuts and a subtle tanginess, characteristic of goat’s milk. As the cheese ages, its flavors develop further, becoming more pronounced and robust without losing its balanced and approachable nature. The cheese has garnered acclaim and several awards since its introduction, reflecting the skill and dedication of Capriole’s cheesemakers.

Tasmanian Leatherwood Honey

Les Moulins Mahjoub has been creating uncompromising, delicious foods since 1896. Their families roots originate in the town of Tebourba, Tunisia. A region that’s renowned for the quality and richness of its soil since the time of the Roman Empire. Since then, large quantities of grains, abundant olive harvests, and huge varieties of fruits and vegetables are the hallmark of the region.

Mahjoub Sundried Tomatoes are dried in the hot summer months of July and August. Four elements are involved: sun, air, salt, and the human hand. Picked when they’re bursting with flavor, the tomatoes are individually layered in glass jars and covered with extra virgin olive oil. This amazing tomato condiment can be used in marinades, dressings, or pizza/pasta sauce for complex Tunisian style flavors.

A low-temperature preparation technique preserves the floral essence and vitality of the honey, resulting in an aromatic and naturally organic product. The honey’s ultra-fine crystal structure provides a buttery, spreadable consistency at room temperature, perfect for various uses.

Ritual Chocolate, Honeycomb Toffee in Dark Chocolate

Ritual Chocolate, nestled in the heart of Salt Lake City, Utah, began its journey in 2010 when founders Anna Seear and Robbie Stout embarked on a mission to create exceptional bean-to-bar chocolate. Drawing inspiration from their backgrounds in food science and culinary arts, they set out to redefine the chocolate experience. Ritual Chocolate’s Honeycomb Toffee in Dark Chocolate uses local-Hollow Tree Honey and 75% cacao. The local bees feast on a wide range of wildflowers across the Wasatch Mountain range, which gives the chocolate unique floral and nectar flavor notes
