Koginut Squash
Koginut squash is a hybrid variety that combines the best qualities of butternut and kabocha squash, resulting in a smooth, dense texture and naturally sweet flavor. Its deep orange flesh is rich in beta-carotene, an antioxidant that turns into vitamin A and promotes heart health. It develops an even richer, caramelized taste when roasted, but its silky consistency also blends beautifully into soups, purées, and risottos.
Unlike some other winter squashes, Koginut has a thin, edible skin and a creamy interior that makes it ideal for both savory and sweet dishes. Its sweetness pairs well with warm spices, fresh herbs, or a drizzle of good olive oil. Roasted, mashed, or added to grain bowls, it’s an easy way to bring the comforts of the season to your meals.
Mahón
Mahón is one of Spain’s most celebrated cheeses, and one of only a few cow’s milk cheeses from the country. It hails from the island of Menorca, where it has been crafted for centuries. Quintana, a family-run producer dedicated to preserving Menorca’s cheesemaking traditions, carefully ages their Mahón in humid caves, allowing it to develop its signature orange rind and bold, nuanced flavor. The cheese is rubbed with paprika during aging, which deepens its complexity and gives it a hint of spice.
Depending on its age, Mahón can range from creamy and buttery with a pleasant tang to firm and crystalline with intense nuttiness and a sharp, lingering bite. Enjoy it sliced with fresh fruit, melted over potatoes or pasta, or grated into traditional Spanish dishes. Locals enjoy it drizzled in extra virgin olive oil with a pinch of black pepper and tarragon on top!
Berner Hobelkäse
Berner Hobelkäse is a revered Swiss cheese with deep roots in the Alpine tradition, made exclusively from raw cow’s milk and aged to perfection. This particular version is brought to us through Adopt an Alp, a program dedicated to preserving the time-honored practice of transhumance; moving the herd several times yearly to allow for healthy grazing and on-site cheesemaking. The result is a cheese infused with the essence of Alpine flora, carefully crafted by dedicated Swiss cheesemakers using methods passed down for generations. Aged for at least a year, it develops a dense, crystalline texture and a rich, concentrated flavor that balances savory nuttiness with a hint of caramelized sweetness.
Hobelkäse means “planing cheese” in German. This cheese is traditionally shaved into delicate curls, enhancing its texture and allowing its complex flavors to shine. It’s perfect as a snack, a topping for hearty dishes, or paired with full-bodied wines and crisp ciders.
