Okra is the seed pod of the Abelmoschus esculentus plant. It’s filled with tiny white seeds and is sometimes called lady’s fingers due to its long, slender, tubelike shape. Native to Ethiopia, okra was brought to North America by enslaved people and settlers when they arrived centuries ago. The light green seed pods are cooked whole or sliced, so preparation is extremely easy, and it can be cooked in so many ways. However, choosing the right cooking method, such as frying, grilling, sautéeing, and pan-roasting, can reduce or prevent it from becoming slimy. Use in soups or stews to act as a natural thickener or sautee and allow the okra to soak up whatever flavors you give it!
Clothbound is an approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish. Clothbound has a signature tang and caramel nuttiness with a rustic crystalline texture that becomes creamy on the palate. The American Cheese Society and World Championship Cheese Competition judges have been consistently impressed by this cheddar. For three years in a row, this cheese has won awards. Its bold flavor wakes up any dish: eggs, burger, sandwich. A stout beer is in order for this bold cheese!
