Rainbow Chard

Rainbow chard is distinguished by its bouquet of wrinkled, rich green and bronze leaves and bright colored stems. Chard is known to be a nutritional powerhouse vegetable packed with vitamins, nutrients and health benefits. It contains high levels of vitamins C, K, E, beta-carotene, manganese, and zinc. Importantly, it also contains betalains, which supports the body’s detoxification process. Culinarily, rainbow chard is one of the most versatile ingredients in the kitchen. Amazing both raw and cooked, the leaves and stems provide a mild bitterness, making it the perfect substitution for other greens such as kale or collards. Complimentary ingredients include citrus, garlic, peppers, & olive oil. Ideally paired with grains such as rice and barley, roasted meats, chicken, bacon, cream, and cheeses such as pecorino and parmesan.

Roquefort

Roquefort is one of France’s most legendary cheeses, made exclusively from raw sheep’s milk and aged in the natural limestone caves of Roquefort-sur-Soulzon. Its crumbly texture is laced with blue-green veining, and the flavor is bold, tangy, and deeply savory with a long, briny finish. The distinct sharpness comes from the Penicillium roqueforti mold, which thrives in the caves’ cool, humid environment. Despite its intensity, Roquefort is remarkably balanced and is delicious with fresh pears, honey, or crumbled into dressings and sauces. It’s a protected cheese with centuries of tradition behind it, and every bite reflects that heritage.

Moser Riesling x Sylvaner

Moser Riesling x Sylvaner is a unique washed-rind cheese from Switzerland, washed in the same crisp white wine that gives it its name. Made from pasteurized cow’s milk and aged for several weeks, it develops a smooth, supple texture and a mellow, fruity flavor with a hint of tang. The wine-washed rind lends gentle aromatics and a touch of complexity without overwhelming the palate. It’s approachable but distinctive, especially good with stone fruit or a glass of dry white wine!

He dumped his entire life savings into starting a US based craft chocolate company and started traveling to remote regions of Ecuador, Tanzania, and the Amazon searching for exotic cocoa beans and small farmers to share the profits with. Their Davao, Philippines 77% Dark Chocolate is made with single-origin cocoa beans sourced directly from smallholder farmers in the Davao region. This bar highlights the richness and depth of Filipino cacao, with bold notes of brown sugar, fudge, and roasted nuts. It’s deeply flavorful without being overly bitter, thanks to careful roasting and minimal ingredients.
