Romanesco
Romanesco is believed to be the psychedelic brain child of 16th century Italian farmers, brought about by selective breeding. Interestingly this edible flower from the broccoli family is effectively a natural fractal, with its spiral buds on spiral buds following the same logarithmic pattern as the famed Fibonaci Sequence. The flavor is equal to that of cauliflower but a touch more earthy and nutty. Romanesco can be served blanched and shocked in an ice bath – to maintain is vibrant color – then put in salads, on veggie trays, and even in pasta dishes. Other optins include roasted with olive oil and garlic then served on an Italian-style sub or if you’re feeling ambitious you can break it into florets and pickle it.
Gold Creek Aged White Cheddar
Gold Creek Farms is a family-owned cheese making facility set on 130 acres in idyllic Woodland, Utah. They grow all their own alfalfa, fertize with their cow manure, and only utilize antibiotics if cows are sick, and which times the cows won’t be used for milk production while being treated. Production is all done on site and kept to a small scale, with complete dedication to local consumers. Their flagship aged white cheddar is a customer favorite. Aged for over a year it is also used as the base for all their speciality cheeses.
La Casearia Perlagrigia
Created in 1980 by cheesemaker Antonio Carpenedo with the intention of revolutionizing the truffle cheese market. Perlagrigia which translates to “grey pearl,” contains small slices of truffle within the curd, and is blanketed in beechwood ash and a mix of herbs and spices. Bold but balanced this is the perfect table cheese but also has beautiful melting quality and can be used fora myriad of other applications.
Carmel Berry Elderflower Syrup
Carmel Berry is a 100% farmer focused, women-owned business. Their goal is to produce elderberry products that promote health, support sustainable processes and the local community. Their elderberries and certified organic, American-grown, and handpicked. The Monterey County Elderflowers used to make this syrup have flavors reminiscent to a Muscat grape or ripe summer pear. Made in conjunction with lemons grow exclusively in Big Sur, it is truly a taste of this coastal region. Utilize a splash in sparkling water, mix in cocktails, or incorporate in to your favorite dessert.
Madhu 78% Lemon Coriander Chocolate
Madhu – which means sweet in Hindi – is inspired the decadence of chocolate combined with traditional flavors of India. Based in Austin, Texas their goal is to produce the highest quality bean-to-bar products. This bright and zesty 78% bar utilizes fresh lemon peel with the herbaceous notes of coriander seed producing an aromatic and satisfying bite.
