Item Highlights

Shiitake Mushrooms

Shiitake mushrooms have been cultivated since the 1200s during China’s Song Dynasty. Native to Eastern Asia, they are now most closely associated with Japan. Shiitakes are named – in Japanese – for the “shii” trees they are seen to grow on in the wild, and “take,” meaning mushroom. Shiitakes are prized for their rich taste that enhances soup stocks, steamed, and simmered dishes. From a dietary and medicinal perspective they contain many of the same amino acids as meat, and are high in copper and vitamin B5. Compounds in them boost immunity and may even help prevent cancer. Utilize shiitakes in stir fries alongside broccoli, add to risotto or ramen, or top a beef tenderloin with them caramelized.

Red Witch

Red Witch is a washed-rind cheese inspired by the pre-Lent revelry of carnival in Switzerland. Acclaimed cheesemaker Christian Oberlin came up with this paprika-rubbed raw, whole cow’s milk cheese to pair with wine, beer and spirits during your most lively parties. Red Witch has an aroma reminiscent of toasted nuts and bacon, with a mild, buttery flavor. It  melts easily and can be used in fondue, hot sandwiches, and over potatoes. While it pairs well with most alcoholic beverages it will be highlighted well by a malty Bock, pumpkin ale, Alsatian Pinot Gris, or Riesling.

Park City Creamery Mayflower Feta

Mayflower is named for the Deer Valley ski slope in Park City. A creamy Goat Milk Feta style cheese preserved in whey and brine. Rich and creamy with a slightly tart flavor; Mayflower will enhance your salad, pizza, cooked veggie with a burst of fresh buttery and lemon flavor. Try it on strawberries or watermelon salad with arugula or watercress or spinach, orange and grapefruit salad.

Blue Corn Masa Harina by Masienda

Masienda is the response to years of monopolistic control over the global masa market, providing a low cost product that did not support its producers or provide a wholesome and flavorful product. Enter Masienda, who supports 2,000 smallholder farmers through Mexico across 30,000 acres of traditional agriculture. Produced in small batches, they provide not only the ingredients but also the tools and education to make high quality tortillas, tamales, and more from home!
