Item Highlights

Shishito Peppers

Shishito peppers are small, bright green, somewhat wrinkled-looking peppers in the capsicum annuum family. The name, “Shishito”, derives from the Japanese words “shishi”, which means “lion”, and “togarashi”, which translated to “chili pepper”. Hence, in Japan, it is known as the “Lion Head pepper”. Most of the peppers are very mildly spicy and even a bit sweet, but occasionally you’ll come across one that’s got some serious kick. It is said that roughly one in ten peppers are hot, but we’ve found a ton of variance—occasionally we’ll get a batch that’s almost entirely mild, and sometimes the breakdown is almost 50/50 spicy/mild. The most popular way these peppers are enjoyed is blistering them in hot oil and hitting them with some lemon juice or other acid for the perfect, punchy snack!

Red Casanova

Red Casanova highlights the exceptional quality of the milk produced by the farmers who belong to the cooperative dairy Bio-Käserei Wiggensbach. The texture of this washed rind cheese is absurdly rich, and velvety smooth. When it comes to flavor, Red Casanova capture the qualities found in hard mountain cheeses from the area, think garlic and onion notes, but in a cheese that has the texture of butter. While the outer rind can get a bit potent in aroma, the high fat content of the paste tampers down any aggressive flavors that would normal show from a cheese in this category. Despite its mouthfeel, the cheese remains firm in form, making it easy to manage on the counter.

Mayflower Feta

Mayflower is named from the Deer Valley ski slope in Park City. A creamy Goat Milk Feta style cheese preserved in whey and brine. Rich and creamy with a slightly tart flavor; Mayflower will enhance your salad, pizza, cooked veggie with a burst of fresh buttery and lemon flavor. Try it on strawberries or watermelon salad with arugula or watercress or spinach, orange and grapefruit salad.
