Item Highlights
Spring Shallots
Spring shallots are young shallots that have been harvested with their green tops still attached. Very similar to scallions, though their bulbs are larger have a light pink tint. These spring shallots are certified organically grown in California and picked early in their life cycle for their gentle sharpness. Sautee the bulbs and finely mince the green stalks for any meal.
Colston-Bassett Stilton
Originating in the village of Colston Bassett in Nottinghamshire, England, Stilton is one of the most recognizable and significant blue cheeses in the world. Colston-Bassett Dairy has been crafting Stilton since 1913 with dedication to maintaining time-honored techniques and locally sourcing milk from family farms. Stilton is known for its bold blue veining and distinct earthy flavor with hints of nuttiness. Perfect with dried fruits, bread, honey, and a dark beer!
Harbison
Jasper Hill Farm has been creating some of the finest, most innovative cheeses for over 100 years. Harbison is named for Anne Harbison, affectionately known as the grandmother of Greensboro. Harbison is a soft-ripened cheese with a rustic, bloomy rind. The young cheese is wrapped in strips of spruce cambium, the tree’s inner bark layer, harvested from the woodlands of Jasper Hill. The spoonable texture begins to develop in vaults, though the paste continues to soften on the way to market. Harbison is woodsy and sweet, balanced with hints of lemon and mustard. Pair with white wine and fresh fruit.
Amano Dos Rios 70% Chocolate
Amano chocolate sources the best possible cocoa beans from Central America and curates their chocolate locally in the Wasatch Range. Amano means both “by hand” and “they love” in Italian. This describes the care and perfection that Amano brings to chocolate and in turn to the people who savor it. This bar started when one day a friend called the founder excitedly about some very special cocoa beans he found in the Dominican Republic. He said they were truly unique, and Amano was the perfect people to make them into chocolate. This chocolate has a bold flavor like bergamot, orange and lavender. These natural flavors are due to the unique way the coca beans are fermented. Amano says “If you want to try a chocolate with that extra bit of “magic,” this is it.”
Regalis Saskatoon Berry Jam
Though they appear like blueberries, wild Saskatoon berries are actually related to wild apples, and are native to North America. Regalis partner with foragers in northern Canada to source wild Saskatoon berries in the summer months and combine the fruit with organic cane sugar, lemon juice and pectin to make this jam. Prized for their sweet almond flavor, this Saskatoon jam does wonders for ice cream, cocktails, and sweet breakfasts.
