Sunchokes

Sometimes known as Jerusalem artichokes, despite no apparent ties to Jerusalem or artichokes, sunchokes are actually members of the sunflower family! Sunchokes are known for their sweet, nutty taste and crunchy texture. They have similar tasting notes to chestnuts, hazelnuts, and jicama. They are a great source of iron, magnesium, potassium, and calcium, while being high in fiber and low in carbohydrates. They can be used in place of potatoes in any recipe if you’re looking to cut down on carbs! They are also excellent raw in a crudité or with creamy dips.

Manchego Añejo

Manchego Añejo is a robust, deeply flavorful sheep’s milk cheese from Spain’s La Mancha region, aged for 10-12 months to develop its firm texture and concentrated, nutty taste. With a rich, savory profile and hints of caramel and hay, it’s bolder than younger Manchegos but still balanced and smooth. The aging process gives it a crumbly, crystalline bite and a lingering finish that pairs beautifully with membrillo, olives, or a glass of Rioja. It’s a classic choice for anyone who loves aged cheeses with character.

Red Witch

Red Witch is a raw cow’s milk cheese from Rossrutti, Switzerland, aged for 6 to 8 months. This is a great snacking cheese with a flavor and texture profile agreeable to most. It has a creamy mouthfeel, sweet with a pleasant, piquant kick from its cayenne pepper-rubbed rind. It’s also great for melting. It was created to go with the beers, liqueurs, and wines enjoyed during Switzerland’s carnival season. Think of it as an artisanal Gruyere or Appenzeller that’s frighteningly delicious!
