Sunchokes
Sunchokes are a member of the sunflower family, native to North America. Sunchokes are sometimes known as Jerusalem artichokes despite having no apparent ties to Jerusalem nor artichokes. The name originates from early-world Italian explorers who thought they tasted similarly to artichokes and referred to them as girasole (“jeer-uh-SOLE-ay”) which means sunflower in Italian.
Sunchokes are known for their sweet, nutty taste and crunchy texture. Sunchokes have similar tasting notes to chestnuts, hazelnuts, & jicama. They are a great source of iron, magnesium, potassium, and calcium; are super high in fiber and low in carbohydrates. Inulin-rich Sunchokes contain no other type of carbohydrate, which is why some call it “the potato of diabetics.” Sunchokes can be used in place of potatoes in any recipe, though they have more moisture and no starch, so cooking times can differ. Perfect to be roasted, boiled, fried, or pureed. Sunchokes are also great raw in a crudité or creamy dips.
OG Kristal Gouda
OG Kristal, known to locals in West Belgium as Brokkeloude Roeselare, is a 22 month aged gouda has it all: rich creamy texture with a fudgy, perfectly balanced butterscotch sweetness, and large, well-formed tyrosine crystals that pop like candy in bite after bite. Tyrosine crystals are the crunchy, salty, savory bits of amino acid that form in aged cheeses as the protein structure of the milk breaks down. Kristal leans sweeter, with notes of boozy cherries and butterscotch. The crystallized texture provides a savory balance to the fruity, nutty sweetness.
Farmstead Camembert
This decadent Farmstead Camembert made by Fermier using traditional French production techniques. Camembert dates back to 1791, and was first made in Normandy by a cheesemaker under the tutelage of priest from Brie. Toasty notes of mushroom are prevalent in this cheese balanced by butter cream. Enjoy with a Bordeaux and some crusty bread, or melt a slice over French Onion Soup.
Banyan Thai Green Curry Sauce
This woman-owned company was brought about by a chance meeting with a Thai master chef. Curries are a staple of Thai cuisine, with a sometimes intimidating cooking process for the uninitiated. That’s where Banyan Thai comes in. Their Green Curry is smooth, zesty, and spicy, with a touch of sweet to finish. Incredibly versatile, this curry can be used with meat, seafood, vegetables, and even poured over rice and noodles.
Askinosie 68% Dark Chocolate with Orange
Askinosie was founded by a father-daughter team and is one of the first craft chocolate companies in the US. Their company is founded on the values of minimal environment impact, fairness, sustainability, and community enhancement. This 58% dark chocolate bar was made in small batches by hand using organic orange peels and a dash of floral orange oil.
