Thomcord Grapes

Thomcord Grapes are simply the best of both worlds. They are a cross between the iconic Thompson & Concord grapes, making for a harmonious blend of the sweet, mild flavor of Thompson Seedless grapes with the rich, aromatic notes of Concord grapes. Their flesh is juicy and bursting with sweetness, accompanied by a slight tartness that adds complexity to their flavor profile. Thomcord’s are excellent in desserts such as grape tarts, sorbets, or even homemade jams and jellies. Their natural sweetness also makes them a great addition to savory dishes, use to add a burst of flavor to salads, sauces, or roasted meats. Pair with Brie or Camembert.

Bauma Garrotxa

The name of this cheese comes from the area of La Garrotxa, in the province of Gerona (Cataluña). Garrotxa fell into extinction for a number of years, but this old-style DOP certified cheese was revived by Catalonian cheesemakers dedicated to traditional production methods. The environmental conditions of the region naturally foster the growth of grey-blue mold, penicillium galaucum, which forms on the rind. Semi-soft paste, tangy flavor, with a nutty, herbal finish are typical of this cheese. The molded cheese is salted in a bath for approximately six hours and finally allowed to mature in a fresh, humid environment. Bauma’s Garroxta presents a bluish-gray velvety cortex with a white interior that is compact, with small cavities throughout. The taste is slightly acidic and pungent with a nutty aftertaste. The pleasing, velvety one-of-a-kind rind and the fresh, tangy, herbaceous paste make Garrotxa a must-have in the case.

Serra Estrella DOP

Serra da Estrela (Queijo Serra da Estrela) DOP is the king of Portuguese cheese and has been made for centuries by shepherds in the mountains of Serra da Estrela. It is a sheep’s milk cheese prepared using Bordalaira ewe’s milk and thistle rennet. While making this hand-made cheese, curds are broken up by hand. Serra da Estrela is semi-soft, spreadable cheese with a rich, intense flavour.

Fishwife Smoked Salmon

The term “Fishwife” dates back to the 16th century, and originally referred to the daughters or wives of fishermen who sold fish at the market. The term gradually evolved into gendered insult for women who were brash, foul-mouthed, and brassy. Fishwife is now a female-founded and led food company aiming to make ethically-sourced, premium, and delicious tinned seafood a staple in every cupboard. Smoked in small batches over a mix of beech, maple, and birch wood, hand-packed, and canned by fifth-generation family-run cannery on the central coast of Washington. Raised by third-generation family farmers in the icy Arctic circle with deep ocean currents that keep the water fresh. This is one of the most recognizable and delicious tinned fish on the market.

Ritual 70% S’mores Bar

The story of Ritual Chocolate begins with a tiny 400-square-foot studio turned test kitchen in the Rocky Mountains of Colorado. Their space was filled by self-built equipment, like a cacao bean drum converted from a chicken rotisserie oven and our beautiful mess of PVC pipes that conjoined from every which way just to winnow cacao shells. They now have a factory in Park City, Utah, where they have the space and capabilities to combine the best old world techniques with newer machinery.

Made with caramelized sugar to give a toasty, fresh off the campfire marshmallow taste, with graham crackers sprinkled on the top. This is a great bar to bring on your adventure, when you don’t have room for all the s’mores components but still want to enjoy those classic graham cracker, chocolate and marshmallow flavors.
