Rainbow Chard
The watermelon radish is a striking variety of the Chinese daikon radish, known for its vibrant pink interior and pale green skin. Not related to watermelon but gets the name from its resemblance to the fruit when sliced. Its visual appeal and mild, peppery flavor make it a popular choice for adding both color and texture to dishes. The watermelon radish is less spicy than traditional red radishes. Its crisp texture and mildly sweet, peppery taste develop more complexity as it matures. Younger radishes tend to be milder, while larger, older ones offer a slightly stronger bite. They’re a good source of vitamin C, fiber, and antioxidants, perfect when roasted with olive oil & herbs or thinly sliced onto a salad
Calderwood
Calderwood is a distinct Alpine-style cheese made by Jasper Hill Farm in Vermont, known for its complex flavor and unique aging process. Starting as a raw cow’s milk cheese, Calderwood is based on a base cheese called Alpha Tolman. What sets Calderwood apart is the final aging stage, where it is coated in hay sourced from Jasper Hill’s own farm. This traditional aging technique, inspired by Alpine methods, imparts a rich, grassy flavor that highlights the farm’s terroir. The result is a semi-firm cheese with a firm rind and a smooth, creamy interior. Calderwood’s flavor profile is robust, featuring nutty and savory notes with hints of caramelized onion and fresh herbs. The hay aging process adds an earthy depth, which complements its buttery texture and slight sweetness. Its aroma is both grassy and toasty, a reflection of the care taken during its aging process. Calderwood pairs exceptionally well with full-bodied wines like Chardonnay or Pinot Noir & cured meats.
Moses Reaper
Moses Reaper is a (monster) mash-up of impeccably made cheese and playful Halloween fun. Jasper Hill puts a spooky spin on beloved, brie-like Moses Sleeper by adding annatto to the silky interior, turning it a festive shade of orange. The sprinkling of vegetable ash around which the bloomy rind forms isn’t just a spooky touch. It nods to a traditional practice in affinage that dates back centuries, but the classic flavors of Moses Sleeper remain: button mushroom, fresh milk, and a slight eggy funk.
Yugeta Soy Sauce
Yugeta Organic Soy Sauce is a premium, traditionally brewed soy sauce from Japan’s Saitama Prefecture.
