King Oyster Mushrooms
Oyster mushrooms are a large, versatile, variety that can be grilled, broiled, sauteed, and braised. Native to regions around the Mediterranean, they have become particularly popular and are cultivated throughout Asia. Due to their texture Oyster Mushrooms make a great meat substitute, such as shredded and seasoned like pulled pork or marinated, skewered, and grilled. While they are safe to eat raw, they are quite flavorless – cooking brings out their best qualities.
Pecorino Romano
Pecorino Romano Fulvi is an ancient sheep’s milk cheese made in the countryside of Rome. Writings that date back to the 1st Century BCE mention this cheese as part of the Roman Legions daily rations, and considered pivotal for a soldier’s wellbeing. Though the name suggests it is from Rome, most modern production has moved to Sardinia. Pecorino Romano is perfect as a table cheese or grated over pasta and salads.
Quesarias del Tietar Monte Enebro
Father-daughter team Queserias del Tietar produce this delightful Spanish goat’s milk cheese. This flattened log shaped cheese is coated with the same mold used for blues like Roquefort. Monte Enebro has a dense, cakey texture, with that classic goat cheese tang balanced by a touch of minerality and hints of walnut. It pairs well with Tempranillo, Grenache, and Alsatian Gewurztraminer.
Alemany Chestnut Honey Vinegar
This sweet and sour Spanish condiment is made with a blend of red wine vinegar and the finest chestnut honey. With its deep fruit notes and slight tang, Alemany Chestnut Honey Vinegar will add richness to any dish. Use in pan sauces for pork, duck, or lamb, or mix with olive oil for a perfect vinaigrette. This can also be used in cocktails to balance a sweeter beverage or mixed with sparkling water for a non-alcoholic option.
Askinosie Del Tambo, Ecuador, 70% Chocolate
The story of Askinosie started when Shawn Askinosie quit his successful law practices and suddenly fell in love with making chocolate from scratch. He dumped his entire life savings into starting a US based craft chocolate company and started traveling to remote regions of Ecuador, Tanzania, and the Amazon searching for exotic cocoa beans and small farmers to share the profits with. Fast forward to today and Askinosie Chocolate is one of the best and most widely recognized specialty chocolates in the US.
The chocolate from this particular bar is harvested and fermented by the farmer on the front of the package, Vitaliano Sarabia. His farm near San Jose Del Tambo, Ecuador produces the ethically farmed beans that Askinosie handcrafts their chocolate from. Expect notes of red fruit, bergamot orange, jasmine, & honey.
